Easy Work Week Survival Meals Part 2

I am picking up nursing shifts again and so I thought I’d share a few recipes that get me through a busy week. Since I’m not there to cook one meal a day I usually employ my crock pot so my kids don’t have to survive their dads version of a fried egg sandwich for supper all week.

Crock pot Sausage

1 onion chopped
4 potatoes cut and quartered
1 cup baby carrots
1 green pepper chopped
1 smoked sausage
1 cup chicken broth

Put in crock pot and cook on high for three to four hours or on low 6-8.

Salsa Chicken Breasts and fajitas crock pot style

4 chicken breasts (I throw mine in frozen)
2 bell peppers chopped
1 onion chopped
2 cups salsa
(Can also add potatoes chopped small if needs to go further)
Wraps or tortillas of choice

Put all ingredients in crockpot. Cook on low for 6-8 hours or on high for about four hours.
