Crock pot to the rescue! Easy chicken supper

If any of you are like me in the summer time, my time is usually planned to the minute several weeks in advance. Between horse shows, Little Horse Company events, care and grooming of four horses and six mini horses, riding lessons, my three girls and thier needs (bathe, feed, clothe, teach, rinse, repeat), keeping my house somewhat clean and oh yeah I have a part time job as a nurse and a husband in the mix somewhere; that being said, I always have a plan for supper. I don’t have time not to. And I love my crock pot. Let’s face it, its usually the only reason my family isn’t eating hotdogs every meal. 🙂

So here’s what’s for lunch today:

Easy Spanish Chicken
(Is it really Spanish? No, probably not, but it is easy, cheap and yummy)
1 can corn or small frozen bag
1 can stewed Italian tomatoes
I bag taco rice (you can use any rice)
Boneless skinless chicken breasts(desired #)

I put chicken breasts, corn (drained if canned), stewed tomatoes, and half cup water in crockpot. Low for 6-8 hours or high for 4-5. (Each crockpot will vary)

Then I make rice on stove top ten minutes prior to serving the meal. And voila! Spanish chicken and rice.
